Ingredients

  • 2 lb ground beef
  • 2 litres chicken stock or beef stock
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 can tomato paste
  • 1 can diced tomatoes
  • 4 medium cremini mushrooms, cut into chunks
  • 1 can black beans, drained and rinsed
  • 1 packet chili seasoning or taco seasoning
  • salt and pepper, to taste

Tools

  • Dutch oven or large pot
  • Wooden spoon or spatula
  • Knife and cutting board
  • Measuring spoons

Directions

Sauté the aromatics

Heat the olive oil in a Dutch oven over medium heat. Add the diced onion and cook until softened, then add the garlic and cook until fragrant.

Brown the beef

Add the ground beef and cook until mostly browned. Stir in the chili seasoning and mix well.

Build the chili

Add the ingredients one at a time, stirring between each addition in this order: tomato paste, cremini mushrooms, black beans, diced tomatoes with their juice, and stock.

Simmer

Bring the chili to a simmer and cook until it thickens to your desired consistency, stirring occasionally.

Notes

  • For homemade chili seasoning, mix cumin, chili powder, onion powder, garlic powder, paprika, oregano, salt, and pepper.
  • Simmer longer for deeper flavor and thicker texture.
  • Adjust seasoning to taste before serving.
