Ingredients

  • 1 pork tenderloin (large piece)
  • 1 cup ketchup
  • 2 1/2 tablespoons brown sugar
  • 2 1/2 tablespoons apple cider vinegar
  • 2 cups apple juice
  • 1 1/2 tablespoons Worcestershire sauce
  • 1 tablespoon spicy mustard
  • 1 1/2 teaspoons cumin
  • 1 tablespoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 6 kaiser rolls, split

Directions

Prepare the rub

Mix cumin, chili powder, onion powder, garlic powder, and half of the brown sugar in a bowl. Cut the pork tenderloin in half and coat it fully with the spice mixture.

Sear and braise

Sear the pork in a Dutch oven, browning all sides. Add the apple juice, cover, and place in the oven for 3 hours. Remove the lid and continue cooking for another 2 hours, until the pork is fork-tender.

Make the sauce

Remove the pork to rest. In the remaining drippings, stir in ketchup, spicy mustard, Worcestershire sauce, apple cider vinegar, and the remaining brown sugar. Simmer over medium-high heat until thickened.

Shred and combine

Shred the pork and return it to the pot. Stir to coat fully in the sauce.

Serve

Serve the pulled pork on kaiser rolls.

Notes

  • Watch the apple juice carefully in the early stages to prevent burning.
  • For extra flavour, let the shredded pork sit in the sauce for 10–15 minutes before serving.
