Pulled Pork Sandwiches
Slow-cooked pork shredded and tossed in a tangy, sweet BBQ-style sauce, served on soft rolls.
Ingredients
- 1 pork tenderloin (large piece)
- 1 cup ketchup
- 2 1/2 tablespoons brown sugar
- 2 1/2 tablespoons apple cider vinegar
- 2 cups chicken stock
- 1 1/2 tablespoons Worcestershire sauce
- 1 tablespoon spicy mustard
- 1 1/2 teaspoons cumin
- 1 tablespoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 6 kaiser rolls, split

- Instant Pot or other Slow Cooker
Directions
Prepare the rub
Mix cumin, chili powder, onion powder, garlic powder, and half of the brown sugar in a bowl. Cut the pork tenderloin in half and coat it fully with the spice mixture.
Sear and slow cook
Sear the pork in the Instant Pot, browning all sides. Add the chicken stock, cover, and slow cook for 5 hours until it is between 195F - 205F.
Make the sauce
Set the pork aside to rest. In the remaining drippings, stir in ketchup, spicy mustard, Worcestershire sauce, apple cider vinegar, and the remaining brown sugar. Simmer over medium-high heat until thickened.
Shred and combine
Shred the pork and return it to the pot. Stir to coat fully in the sauce.
Serve
Serve the pulled pork on kaiser rolls.
Notes
- For extra flavour, let the shredded pork sit in the sauce for 10–15 minutes before serving.
