Classic Pancakes
Fluffy stovetop pancakes with a simple batter.
Ingredients
- 1 1/2 cups all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 1/4 cups milk
- 1 egg
- 3 tablespoons melted butter
- 1 teaspoon vanilla extract
Tools
- Mixing bowl
- Whisk
- Non-stick skillet or griddle
- Measuring cups and spoons
- Spatula
Directions
Make the batter
Whisk the dry ingredients in a bowl. In a second bowl, whisk the milk, egg, melted butter, and vanilla. Pour the wet mixture into the dry ingredients and stir just until combined.
Rest briefly
Let the batter sit for 5 minutes so the flour hydrates and the pancakes cook up a little fluffier.
Cook
Heat a lightly buttered skillet over medium heat. Add about 1/4 cup batter for each pancake. Cook until bubbles form and the edges begin to set, then flip and cook until golden.
Notes
- Do not overmix; a few lumps are fine.
- Add blueberries or chocolate chips after portioning the batter into the pan.
